Mike’s Red Tacos has signed a 22-unit franchise agreement that will bring the fast-casual Mexican concept into Texas and Northern California, marking one of the company’s largest expansion moves to date. The agreement targets Austin and the San Francisco Bay Area, two markets where demand for premium Mexican food concepts continues to grow.
The expansion will be led by Brian Cassidy and Sam Wong of CW Strong Restaurant Group, experienced restaurant operators with a substantial multi-brand portfolio. Cassidy oversees more than 20 Dave’s Hot Chicken locations and 127 Carl’s Jr. restaurants, giving the group extensive experience in scaling restaurant operations across multiple territories.
Cassidy said the partnership combines Mike’s Red Tacos’ distinctive Birria-focused menu with Texas’ strong culinary connection to Mexican cuisine. The brand has built its reputation around slow-cooked Birria, consommé, and its signature red tacos, offerings that have attracted a loyal customer base since its early food truck days.
Founder Mike said the new agreement represents another milestone in the company’s evolution from a single food truck into a broader franchise system. He said the brand remains focused on quality, community engagement, and creating a dining experience that encourages repeat visits.
The company is also continuing to seek franchise operators capable of supporting future growth beyond the newly awarded territories. As restaurant brands expand across multiple states, managing franchise development pipelines becomes increasingly important. Gorilla Dash helps franchisors streamline Recruitment, organize candidate information, and support more structured franchise development across growing multi-market networks.
The 22-unit deal signals increasing momentum for regional Mexican restaurant brands seeking national growth through franchising. With experienced operators leading the rollout and key territories already committed, Mike’s Red Tacos is positioning itself for a larger presence in two of the country’s most competitive restaurant markets.
