The Brass Tap is preparing to enter Delaware for the first time with a planned restaurant in Middletown, adding a new state to the craft beer and dining franchise’s footprint of more than 50 locations nationwide. The restaurant is expected to occupy space at Bayberry Town Center, 235 Town Center Drive, under a newly signed franchise agreement led by Ashil Patel. The project remains subject to completion of lease negotiations, and an opening date has not yet been announced.
For Patel, the agreement marks a significant career change. After nearly three years in the corporate pharmaceutical industry, he is moving into restaurant ownership, bringing a Doctor of Pharmacy degree and an entrepreneurial outlook to the venture. His interest in The Brass Tap developed after visiting a family friend’s location in Marietta, Georgia, and speaking with franchisees in other markets. Those conversations helped him understand the value of joining an established system while learning an unfamiliar business.
The planned Middletown restaurant will offer local and regional craft beers, specialty cocktails, premium wines and a chef-inspired food menu. Patel envisions a gathering place for residents, with family nights, sports watch parties and community events among the experiences he hopes to introduce. He has also emphasized creating a supportive workplace, treating bartenders, servers and kitchen employees as essential members of the business.
The franchise support structure was an important factor in Patel’s decision. He said the guidance available from the corporate team helped address his lack of experience in the bar industry. For new operators entering an unfamiliar sector, organized training and accessible operating information can be especially valuable. The Knowledge Base feature available through Gorilla Dash can provide a centralized place for franchise teams to organize procedures, training materials and reference information as they prepare to launch and manage a location.
The Delaware agreement represents another step in The Brass Tap’s national development. The brand is part of FSC Franchise Co., which also operates Beef 'O' Brady’s and Newk’s Eatery. For Patel, the project offers an opportunity to build a family-owned business around food, drinks and local connections. For the franchise, it brings its neighborhood tavern concept into a new market while adding another entrepreneur to its expanding system.
