Jersey Mike’s Subs, the fast-casual sandwich chain now operating over 3,000 locations nationwide, has appointed industry veteran Stacy Peterson as its new President and Chief Operating Officer. CEO Charlie Morrison praised Peterson’s appointment, noting their previous collaboration at Wingstop. “Stacy played a pivotal role in Wingstop’s growth and success, and her expertise in operations, marketing, and technology will be instrumental as Jersey Mike’s enters its next phase of expansion,” Morrison said.
Peterson brings a wealth of experience, having previously led Jeni's Splendid Ice Creams as CEO and held senior roles at Wingstop, FedEx Office, Blockbuster, and Service King Collision Repair Centers. Her career combines operational rigor with strategic leadership, making her well-suited to guide Jersey Mike’s through its rapid expansion while maintaining brand consistency and customer satisfaction.
Her arrival coincides with Jersey Mike’s continued ascent as a franchise powerhouse. The brand was ranked #2 on Entrepreneur’s 2025 Franchise 500 list and is recognized among Forbes’ Best Brands for Social Impact. In 2025, the chain raised a record $30 million during its 15th annual Month of Giving, highlighting its commitment to communities beyond serving sandwiches.
