Restaurant operator Michael McGuire is bringing the rapidly growing Mike's Red Tacos concept to Minnesota through a new 15-unit development agreement. The expansion will be led by McGuire and his family business, 825 Ventures, marking the brand’s first multi-unit franchise partnership as it begins scaling beyond its California roots.
McGuire brings extensive franchising experience to the project. Through 825 Ventures, he has built a portfolio of more than 23 locations of Jersey Mike's Subs, with additional restaurants currently in development. He will oversee the Minnesota expansion alongside his sons, Kavrin and Dillon, continuing the family’s focus on community-oriented hospitality and operational consistency.
The San Diego-born taco brand has gained attention for its slow-cooked birria and signature red tacos served with rich consommé for dipping. The concept began as a food truck before evolving into brick-and-mortar restaurants that have developed a loyal following among diners seeking bold flavors and a highly shareable dining experience.
McGuire said the brand’s authenticity and strong culture drew him to the opportunity. “From the moment I discovered Mike's Red Tacos, I knew it was something special,” he said. “My family and I are thrilled to help introduce the brand and share its authentic birria and signature red tacos with our community.”
Company leadership also views the partnership as a strategic milestone for the brand’s expansion. Vincent Montanelli, president of Mike's Red Tacos, said the McGuire family represents the type of experienced operators the company seeks as it grows. With more than 200 franchise units already committed nationwide, the Minnesota agreement signals growing momentum for a concept that aims to turn its signature birria tacos into a national fast casual staple.
