Zambrero has appointed Daryl McCormack as its new Chief Executive Officer, following the departure of Matthew Kenny, who stepped down after five years in the role. The leadership transition marks a pivotal moment for the Australian-born Mexican fast-casual chain as it continues to expand both locally and overseas. Founder Dr. Sam Prince said the move reflects Zambrero’s commitment to strengthening its executive leadership in preparation for its next stage of growth.
McCormack brings more than three decades of experience in franchising, retail, and corporate management. He began his journey with Zambrero 13 years ago as a development agent in Victoria and later became a multi-unit franchisee, gaining firsthand insight into the company’s operational challenges and opportunities. Before joining Zambrero, McCormack held senior leadership roles at KPMG, Blockbuster Australia and New Zealand, and Video Ezy, where he oversaw more than 500 locations across the region.
“I am thrilled to take on this new challenge and continue building on Zambrero’s incredible legacy,” McCormack said. He emphasized his goal of fostering collaboration and innovation across the franchise network, adding that the company’s strength lies in its people and shared purpose. Under its new leadership, Zambrero aims to accelerate global expansion while maintaining its strong presence in Australia, where it operates 285 of its 339 restaurants worldwide. The company has recently expanded into new markets, including the United States and Ireland, and has signaled plans to open additional locations in the United Kingdom and Asia. The brand’s “Plate 4 Plate” initiative, which donates a meal to someone in need for every meal purchased, remains central to its identity and appeal.
As Zambrero enters its third decade, McCormack’s appointment is seen as both a nod to the company’s roots and a step toward a more ambitious global footprint. His combination of operational experience, franchise insight, and cultural alignment positions him to guide Zambrero through a new chapter of strategic growth.
