Glasgow’s West End will soon welcome a new entrant to its dining scene as Zambrero prepares to open its first Scottish restaurant in February 2026 at 333 Byres Road. The location will provide seating for 50 guests and will support both dine-in and takeaway service. The arrival of the brand is expected to create approximately 15 jobs, signaling further economic activity for the neighborhood and offering new employment opportunities in the hospitality sector.
The menu will reflect Zambrero’s signature style with burritos, bowls, tacos, nachos, and quesadillas. Diners will be able to choose from slow-cooked meats as well as vegetarian and vegan options, reflecting a broader shift in consumer demand toward customizable and inclusive dining. The company previously introduced Glasgow residents to its offerings through a delivery-only kitchen launched in September, which allowed the brand to begin establishing a local following ahead of its physical launch.
The new restaurant will be led by franchise partner Dan Hawley, who previously operated four Zambrero locations in Australia. Hawley recently relocated to Glasgow with his wife and three children to oversee the restaurant’s development and ensure a smooth opening. His experience brings familiarity with the brand’s operational model and culture, which will be integral as Zambrero introduces itself to the Scottish market.
Zambrero has grown into the largest Mexican restaurant franchise in Australia and Ireland, with more than 300 locations spanning Australia, Ireland, New Zealand, the United States, and the United Kingdom. Since entering the UK in 2021, the brand has opened sites in London, Manchester, Birmingham, Reading, and Essex. Its expansion into Scotland marks another step toward its goal of reaching 100 UK locations by 2030 and demonstrates the company’s continued momentum as it builds its presence across major regional markets.
