Subway is introducing Blueprint, a redesigned restaurant and brand concept intended to support growth across Europe, the Middle East and Africa. Announced on October 8, 2026, the initiative will become the standard for every new Subway restaurant and remodel in the region beginning January 1, 2027. The company says the approach extends its long-standing focus on customization beyond food to the overall dining experience.
Blueprint combines updated interiors with a more digitally connected ordering process. Customers will still be able to order directly from a Sandwich Artist, while self-service kiosks, the Subway app and delivery options provide additional ways to customize and purchase meals. Digital order-ready screens and designated collection points are also intended to make pickup more straightforward for customers and restaurant teams.
The concept also aims to bring customers into restaurants at more times of the day. Subway is introducing a breakfast and coffee offering alongside Grab & Go options designed for busy locations. Its Subway After Dark concept, currently being piloted in the Netherlands, adds a distinct evening atmosphere and a menu featuring items such as macaroni and cheese, footlong pizzas and loaded waffle fries. The company says the availability of these new dining occasions will depend on individual locations and local demand.
Blueprint is part of Subway EMEA’s broader growth strategy. President Tracy Gehlan said the concept is intended to reflect how customers want to order, when they choose to visit and what they want to eat. Subway has also stated its ambition to nearly double its restaurant footprint across EMEA over the next five years, making a consistent yet adaptable restaurant format an important part of its expansion plans.
