Former McDonald’s Franchisees Diving Into Texas Fast-Food Arena with Bold Zaxby’s Expansion

Former McDonald’s franchisees Jonathan and Brian Ellis are making a bold move into the competitive Texas fast-food scene by acquiring three Zaxby’s restaurants and setting their sights on expanding the beloved brand in the Dallas-Fort Worth area.

With a six-unit development deal in the works to bring more Zaxby’s stores to Tarrant County, the Ellises are leveraging their experience in managing McDonald’s restaurants to tap into what they see as a significant opportunity for growth in Texas.

The existing three Zaxby’s locations in the Dallas metro are undergoing operational improvements and receiving a fresh facelift under the Ellis family's ownership, signaling a commitment to elevating the customer experience and revitalizing the brand's presence in the region.

Texas holds a special place in Zaxby’s expansion strategy, as the state serves as a pioneer market for the chain, which boasts over 900 locations nationwide and a strong focus on franchise development.

Recent corporate changes within Zaxby’s have also brought about new opportunities for growth, with co-founder Zach McLeroy stepping down as CEO and the brand being acquired by Goldman Sachs Merchant Banking Division. Chief Development Officer Mike Mettler is now spearheading efforts to unlock Zaxby’s growth potential in the market, leveraging development incentives to drive expansion.
