With more than 30 years in accounting and two decades focused on restaurant franchising, Clark steps into the role with a deep understanding of how financial systems can shape growth.
Clark most recently served as vice president of finance at Jefferson’s, where she supported the restaurant group’s expansion efforts. Before that, she was chief financial officer at Goodcents Deli Fresh Subs, guiding fiscal strategy and long-term planning. Her career blends technical accounting expertise with a practical knowledge of restaurant operations, giving her a comprehensive view of what drives success in foodservice.
“The Big Biscuit has a solid foundation, and its leaders are committed to nurturing franchisee success, which has always been central to my work,” Clark said. She added that she aims to build systems that turn financial data into clear, actionable insights for both leadership and franchise operators.
Her appointment comes at a pivotal moment for the brand. Since launching franchising in 2019, The Big Biscuit has actively sought franchise partners to bring its model of family-friendly breakfast dining to new communities. Clark’s role will be critical as the company prepares for expansion into St. Louis and the Dallas–Fort Worth area, both of which demand careful financial planning and strong operational support.
