Potbelly has brought back its seasonal S’mores Cookie, returning one of the chain’s most popular limited-time desserts to restaurants nationwide beginning Aug. 3. The company said the cookie was reintroduced in response to strong customer demand and is intended to evoke the flavors of a traditional campfire s’more.
The dessert features a graham cracker-inspired cookie base topped with marshmallows and Hershey’s Mini Kisses® and is baked fresh daily in participating restaurants. Potbelly said the product has developed a loyal following among customers who look for its return each summer.
Eric Chenel, Potbelly’s director of consumer insights and innovation, said the company has consistently heard from guests who associate the cookie with summer traditions and childhood memories. He said the decision to bring it back was driven by customer enthusiasm for the seasonal offering.
Potbelly is also extending the promotion through its loyalty program. From Aug. 10 through Aug. 16, Potbelly Perks members can receive a free cookie with the purchase of an entrée, adding a loyalty-focused incentive to the broader seasonal campaign.
Limited-time food promotions have become an important customer-engagement strategy for restaurant brands, particularly when paired with loyalty rewards and seasonal themes. Platforms such as Gorilla Dash can help franchise operators manage Competitions and Promotions, coordinate campaign execution across multiple locations, and maintain consistency in promotional messaging.
The S’mores Cookie campaign reflects a broader restaurant-industry trend toward nostalgia-based marketing, in which familiar flavors are used to create emotional connections with customers. By combining a returning seasonal product with a loyalty reward, Potbelly is positioning the promotion as both a summer treat and a repeat-visit opportunity for its restaurant network.
