Potbelly Sandwich Shop has appointed Jennifer Durham as Senior Vice President of Franchising and Development, a move that underscores the company’s intention to accelerate its national growth. Durham brings more than 20 years of leadership experience spanning finance, operations and development across major restaurant and franchise brands. Her new role places her at the center of Potbelly’s plans to scale its footprint and strengthen its position in the fast casual category.
Durham began her career as a certified public accountant with KPMG before transitioning into restaurant leadership. She went on to take on a series of high-level roles at Checkers & Rally’s, ultimately serving as Chief Development Officer. She later guided development efforts at Cooper’s Hawk Winery & Restaurants and Hand & Stone Massage and Facial Spa. Her combined experience in finance, real estate strategy and franchise support has positioned her as a respected leader in multi-unit expansion.
Adam Noyes, recently promoted to president of Potbelly, said the company is entering a critical period of growth and described Durham’s arrival as perfectly timed to sustain that momentum. He noted that her familiarity with both new market entry and scaling in established regions will play a key role in shaping the company’s next phase. Noyes emphasized that the leadership team is aligned around growth that balances opportunity with operational discipline.
