Zack Mixon, CEO of Mixon Foods, has signed a 10-unit development agreement to bring the popular fast-casual salad brand Saladworks to North Carolina. With more than two decades of experience as a commercial general contractor, Mixon transitioned into the restaurant business in 2018, acquiring the historic King Chicken Drive-In—a local favorite dating back to the 1950s—and the well-loved Boss Hog's Chicken & BBQ, both based in Washington, North Carolina.

Although his restaurant ventures have largely featured fried comfort food, Mixon has long been passionate about healthy eating. “Finding Saladworks as a regular customer was nothing short of a revelation for me,” he shared. “I was instantly captivated by the brand’s commitment to freshness, quality, and cleanliness. It perfectly mirrors my family’s values, and we take immense pride in bringing that experience to our communities across the state.”

The first Saladworks location is set to open in Greenville in spring 2026, with additional restaurants planned for the Greenville–New Bern–Washington corridor, the Raleigh–Durham and Fayetteville areas, and the Wilmington market.
