Once relegated to the culinary no-man's-land of bland terminal eateries, airport dining has ascended to new altitudes, thanks to PizzaExpress. Launching its second airport restaurant—this time at Edinburgh Airport—the famed pizzeria is cranking up ambition alongside crispy pancetta. No stranger to the fast-paced airport game, PizzaExpress first opened its wings at London Gatwick precisely 12 months ago. And if the brand's plans come to fruition, we’ll be seeing pizzas at 36,000 feet with their worldwide expansion aiming for 1,000 outlets by 2030.

The new Edinburgh Airport location offers something extra tailored for travelers: a menu that rings a morning bell with unique breakfast twists. Start your journey with breakfast Dough Balls paired with jam, a rather cosmopolitan egg pizza adorned with mushrooms and plum tomatoes, or spiced Shakshuka Baked Eggs that make you forget you’re eating in an airport. But don’t snooze too long—after 11 a.m., the kitchen pivots to what fans know best: classics like American Hot and Padana, along with salads, pastas, and desserts.

Even pancakes make a cameo. With pancetta and maple syrup no less, proving that the franchise isn’t just bringing creative gustatory options to airports but redefining them altogether. In its collaboration with Airport Retail Enterprises (ARE), PizzaExpress might just make missing a flight somewhat bearable.
