Cheba Hut “Toasted” Subs is preparing to open a new restaurant in South Scottsdale on October 26, 2026, bringing its counter-culture atmosphere and menu of more than 30 signature toasted subs to 2200 N. Scottsdale Road, Suite 110. The location, just south of Old Town Scottsdale, will become the brand's 13th restaurant in the Phoenix area. Its menu includes familiar favorites such as the White Widow and Kali Mist, alongside other sandwiches, snacks and beverages.
The opening represents another milestone for franchisees Justin and Michelle Lemos, who now operate five Cheba Hut locations opened or added to their portfolio in less than two years. Their expansion began with a North Scottsdale restaurant in February 2025, followed by a location near the Loop 101 and Shea Boulevard. They later took over the Paradise Valley restaurant and added a location in Arcadia before turning their attention to South Scottsdale.
The new restaurant will reflect the brand's emphasis on distinctive interiors and local identity. Artist Joshua Finley, whose work appears in more than 50 Cheba Hut locations, has created an anime-inspired interpretation of the Old Town Scottsdale area for the space. The restaurant will also feature work by local creators Aubri Swell and Basile Taylor, giving the interior a connection to the surrounding arts community.
For the Lemoses, the concept extends beyond food. Justin Lemos has said that the music, artwork and staff were central to the couple's original attraction to Cheba Hut. He also emphasized hiring locally and promoting employees from within, linking new restaurant openings with opportunities for workers to advance as the business grows. The South Scottsdale location places that approach in a neighborhood close to Old Town attractions, Papago Park and Scottsdale Stadium.
As restaurant groups expand, maintaining a distinct identity across multiple locations while remaining relevant to each community can become an important part of the customer experience. Gorilla Dash offers a Social Media feature that can help businesses coordinate digital content and share local updates across their channels. For Cheba Hut, the immediate focus is on introducing its South Scottsdale restaurant to the neighborhood, adding another location to the Lemoses' growing portfolio and continuing the brand's blend of sandwiches, art and casual gathering spaces.
